And have the milanesa with — of course — green chiles and cheese.
And if you’re traveling to the Land of Enchantment (and seriously, you should, because: what an apt name!), I recommend that you take along Zora O’Neill‘s excellent Moon guide, which suggested this and so many other wonderful places — not just for eating, but also hiking, sleeping, browsing, admiring, and exploring.
At Taos Pueblo, which looks like this, you can get fry bread made to order.
Outside of Santa Fe, there’s the deservedly famous Bobcat Bite, which makes one of the best cheeseburgers I’ve ever had. Period. The meat and the bun are perfect, but it’s the green chiles that make it special.
And really, you should get green chiles on everything. And if you love them as much as we do, you’ll ship home a few cases of jarred roasted chiles. (As well as lots of rocks.)
